My month(s) in Instagram updates *September and October*

Hello Lovies, did you miss me?

My October was so busy, I didn’t even have time to update you about my September, so I decided to combine both months into one post.

As you know, my September was all about fashion events and catching up with work. I did my best to enjoy the last warm days, sneaking to the beach for one last day this year since the entire month of September was an Indian summer!

October was insanely busy at work! I had so much to do, I haven’t even gotten my nails done (long live 60 second nail polishes) ❣️

I had time to celebrate Halloweeen and dressed up for the trick or treaters 🎃👻

I don’t know about you Lovies, but I can’t wait until Thanksgiving at the end of this month! I’ll be doing some more traveling, so stay tuned for that.

I’m happy to announce we are back to regular posting of outfits, food and adventures!

Don’t forget to follow me on snapchat and Instagram (@SilviaMelange), for daily updates.

Homemade Basil Pesto with a twist

Happy Spring to those of you who only follow my foodie posts 🙂

You should know by now I’m all about healthy, clean eating all year round! But I’m sure you’ve also noticed I don’t pass up on goodies like holiday cookies, hot cocoa on a snowy day or a heavy French dish done right ;]

With Spring approaching and summer right around the corner, it’s time for a little detox. I’m a firm believer that once or twice a year, you should give your body some rest. Whether it’s low-carb, juicing or even the zone, take some time to “clean up” and focus on eating right, supplying your body with everything it needs 🙂

Today, I’ll share my favorite basil pesto recipe. It’s healthy and flavorful, goes well with whole grain pastas, salads or even used as a spread with some cherry tomatoes (the last one being a personal favorite)! It takes less than 5 minutes to prepare, so I don’t want any excuses!!!
You will need:
2 cups of fresh cleaned basil leaves

1 cup baby spinach (my twist, making it optional)

1/4 cup freshly shredded Parmesan cheese

1/4 cup virgin oil

3-4 minced garlic cloves

1/3 cups pine nuts or walnuts (optional)
Directions:

Blend all the greens, nuts and minced garlic cloves on medium, switching to high for 30 seconds to a minute (depending on your blender). Switch back to medium, adding the Parmesan. Finally, on low, slowly add the virgin oil.

A few tips:

Don’t cut any of the leaves, if you absolutely have to, just rip them up with your hands.

If your goal is to lose weight, skip the nuts and add only 1-2 tea spoons of virgin oil, just enough to blend the rest of the ingridients.
Have a healthy Spring, everyone!

Beer-fried mushrooms *appetizer*

Happy Monday, darlings! Today I’ll be sharing one of my favorite 30 minutes or less appetizer recipes! Aside of the amazing taste, I love this recipe because it takes less than 30 minutes to prepare and it consists of things EVERY self-sufficient 20 something adult always has laying around their kitchen!

You will need:

1-2 lbs (500g-1kg) washed whole mushrooms

3-4 eggs (stirred)

a can of beer

1 t.s. dried thyme, garlic powder, rosemary, salt and crushed black pepper

1-2 cups of flour

1/2 bottle cooking oil

Directions:

Boil the mushrooms for 6-8 minutes in water with a pinch of salt. When that’s done, drain and rinse them with cold water and place them in a mixing bowl and set them aside for now. Boil some cooking oil in a regular frying pan, setting it on medium heat. When it’s sizzling and ready, dip each mushroom in the following order: beer, egg mixture, the spices, flour, beer. Yes, you are reading correct and I didn’t mess up- it all begins and ends with beer! Place the ready mushrooms in the pan and be careful not to get burned by the hot oil! Do not overcrowd your pan, do two rounds of mushrooms if you have to! Each load should take you no more than 5-6 minutes until reaching golden brown. If you need to do two rounds, using the same oil is okay as long as you don’t overdo the flour and there’s none floating in your oil after the first ones are done. Once you take them out of the oil, place the ready mushrooms on a baking sheet or a thick kitchen towel to absorb some of the extra grease off.

Enjoy!
